Keto Meatloaf Muffins (Fat Bombs)

These are perfect for meal planning, but they are also perfect for satisfying a hungry family. The kids like the size of them and they can stab them like a meatball with their fork and munch away.


They are pretty simple to make. I always saute the onions because I like them nice and done in my meatloaf. My mom used to bake meatloaf and put raw onions and pepper in there before baking and they never got done enough for me and made it more watery. So, I like mine really good and done. Your preference.


I also use the parchment paper liners for a lot of my keto cooking. They make my life easier. You can get them at Target or on Amazon. Target is usually cheaper. I order them online and just go pick them up.



Here is the recipe I used.


Meatloaf Muffin (Fat Bombs)


Ingredients:

  • 2 pounds 85/15 ground beef

  • 1 egg

  • 1 small onion (sauteed)

  • 1 tsp onion powder

  • 1 tsp garlic powder

  • 1 tbsp Italian seasonings

  • Salt and Pepper to taste

  • Primal Kitchen Ketchup to add to top. I also add a small amount in the mix.

  • 2 cups Pork Rind Crumbs


Instructions:


  1. Preheat oven to 350°

  2. Line muffin tin with parchment liners (or grease the muffin tin)

  3. Saute the onion

  4. Mix everything except the ketchup together. Save most for the top of muffins.

  5. Once well combined fill each tin evenly. You may have some leftover. I got 16 out of mine.

  6. Cover each one with Primal Kitchen Ketchup. Sprinkle with more Italian Seasonings.

  7. Bake for 22 minutes.


Let cool and ENJOY.
